Day 7 and 8-In the groove

Not sure why my pictures are rotated but you get the idea.

Day 7
Breakfast-I decided to change it up a bit and have some monkey salad (banana, almond butter, cashews, shredded coconut) and some fried eggs. I confess I made a minor violation to the Whole30 details when I used PAM to cook my eggs. I just can't get them not to stick with oil and was getting really frustrated. That minute amount of palm oil isn't going to affect my body-really.

Lunch-Leftover from last night dinner, roasted veggies and homemade sausages.

Dinner was a fun (and tasty) experiment. Based on a recipe for zucchini ravioli (I used ground beef and added a bunch more spices) I made a few of these delicious nuggets. I only had one zucchini and the girls really didn't want to go to Trader Joes at 4PM so I cored a bell pepper and stuffed it too.

I had to make my own pasta type sauce since all of them have SUGAR (and usually soy). Dumping a bunch of spices in a plain can of tomato sauce did the trick. We will make this recipe again, if I can remember what I did...

 Day 8
Breakfast
Saturday breakfast has always been a big deal for us, pancakes, bacon, the works. So this morning we went through the effort to make the sweet potato waffles that I made last week. Add some sausage and banana and breakfast was served. The girls had regular waffles-with syrup and chocolate sauce...

Lunch was leftover spicy sausage mix with eggs.

Dinner was a yummy, peppery beef stew that has been in the crock pot all day. It was good but not very filling...

...so we needed a snack before bed. Banana, almond butter, date, whole30 no sugar chocolate square, mine has cashews and strawberries and coconut, Rob's has some home made nut granola. Mmmmmm......
