Day 3-Snow Day

The McGillvray's slept over after the SuperBowl and got snowed in on Monday so we had a whole day of Whole30 goodness. Rob and Matt stayed home from work because of the snow and the four kids were actually mostly pleasant! Glad we had a Whole30 BJs trip this weekend!

Breakfast is looking familiar-potato hash, scrambled eggs, bacon, banana, coffee.


The little kids joined us, the big kids had pancakes and syrup...not exactly Whole30.

Forgot to take a picture of lunch but we had Asian marinated Chicken legs that I froze last week. I didn't have at least half of the ingredients but subbed what I had and it was yummy. Coconut Aminos are a good substitute for soy sauce (soy is not allowed, and soy sauce also has wheat-look at the ingredients!) and I used apple and macadamia nuts for the honey and oil. I blended it all up and threw it in a ziplock with the chicken legs (on sale at Whole Foods last week). Thawed in no time and baked for a yummy lunch. We had roasted broccoli and cauliflower along side. 

Dinner (after the kids finally were in bed) was baked salmon, citrus salad (oranges, red onion, and avacado), and sauteed zucchini 'noodles', carrots, and kale. Yum. 


We all had a few hand fulls of nuts and tea in the afternoon as a snack. It's going pretty well so far.
