Day 2-Superbowl Sunday

For those who think 'junk food' is a necessity during the Super Bowl, I'm here to prove you otherwise. The day started normally with eggs and hashbrowns (I forgot to take picture), and after church we started cooking for the SuperBowl party we were hosting for a bunch of Whole30 friends. 

Minor glitch: while heating up leftover meatballs and veggies for lunch, the microwave died. Now, I realize that they were not as fancy as today, but at least paleolithic man HAD microwaves!! How am I supposed to live this way without one? Thankfully, Rob saved the day with a quick trip to Target and now we have a shiny new red one-bet you didn't have the red option, caveman.


Butter is one exception to the no dairy rule, but it must be clarified (milk proteins removed). This is accomplished easily by melting the butter and pouring off the clear liquid that separates from the white milk protein. Here's the final result:

Next I started on the sweet potato and beet chips. This was not as easy as advertised. Slicing was a cinch with my awesome mandolin (which looks like torture device after slicing beets) but baking proved to be next to impossible. I burnt the first batch and the next took so long to cook that the oven was occupied forever, delaying all the rest of the meal. Frustration. But the chips finally turned out...phew.

These are not really in the 'spirit' of Whole30, but yummy none the less. One of the Whole30 rules is you are not supposed to make 'treats' from approved ingredients. But I like to experiment, so I cheated a little. These 'chocolates' are made from almond butter, coconut butter, 100% cocoa unsweetened chips, and dates. I melted it all in a pot and let it sit on low for a while for the dates to give off some sweetness. Poured it in this awesome mini brownie pan and refrigerated. They were amazing. Dark chocolatey goodness with just a hint of sweet. Yum. 



Laura brought plantain chips. Which were delicious...

...especially dipped in this buffalo chicken dip that Steph made. Yum.


 Prosciutto wrapped asparagus. Directions: Broil. Shut off smoke detector. Repeat 10x.

So. Many. Kids...


This veggie plate almost completely disappeared, mostly thanks to the buffalo chicken dip.

 Dinner: Taco salad with salsa and avocado. Delicious.

 Some finished chips, after much frustration....

 And we also packed Rob's lunches for work-roasted turkey breast and sweet potato. I think he's planning on taking some carrots and celery with almond butter to dip and nuts to snack.
